 I might have published this before, but it bears repeating.  This recipe is very versatile. Change out the fruit according to what you can find in the market or even the frozen fruit section of grocery stores.  You can also change out the shape by changing the mold from the recommended loaf pan to whatever you have handy. I personally collect those copper-colored gelatin molds you find in thrift stores and garage sales, but the new silicone molds offer a wealth of opportunities. Even individual molds can make serving much easier.  A dollop of whipped topping and a sprinkle of edible glitter finishes the dessert in moments. Voila! You look like a star and note that even vegans might enjoy this dish. 

Pineapple Sherbert

Pineapple Sherbert 1 envelope unflavored gelatin ¼ cup cold water 2 cups buttermilk ¾ c sugar 1 8-oz can crushed pineapple (juice pack) 1 t vanilla 1 egg white 2 T sugar Put hot water on to boil. If you have a double boiler, use it. If you don’t have a double boiler, put a pot of water on to boil, and make sure you have a heatproof bowl that will fit over the saucepan of boiling water without touching the boiling water. Soften gelatin in the bowl, in ¼ cup cold water.Place the bowl over the boiling water until the gelatin dissolves completely. In another large mixing bowl combine buttermilk, ¾ cup sugar, the undrained crushed pineapple, vanilla, and the gelatin mixture. Turn into an 8x8x2-inch pan. Cover and freeze until firm. Chill a large bowl in the refrigerator at the same time. Keep it cold until needed. Beat egg white to soft peaks; gradually add 2 T sugar, beating to stiff peaks. Sugar Free Flavored Syrups make Low Carb Treats

Who says life must be dull and flavorless? Who says we can't have delicious low carb desserts? Whoever THEY are, they're WRONG! Dead wrong. Diabetic Sweetened Condensed Milk

Jo's Sweetened Condensed Milk 1/2 cup cold water 1-1/3 cups Carnation Nonfat Dry Milk Powder 1/2 cup Sugar Twin or Sprinkle Sweet Place cold water in a 2-cup glass measure. Stir in dry milk powder until mixture makes a smooth paste. Cover and microwave on High (100% power) 45-60 seconds or until mixture is very hot, but not boiling. Stir in Sugar Twin. Mix well to dissolve. Cover and refrigerate at least 2 hours before using. Will keep up to 2 weeks in the refrigerator. Use in any recipe that calls for sweetened condensed milk. Makes the equivalent of one 12-oz can of commercial brand. Lena's Best Diet Dessert-- Ice Cream Substitute

This is so versatile, you can make it many ways. Just use diet Jello and Splenda instead. It can be molded (or not) and you can add fruit if your diet allows.
