Impossible Coconut Pie

Image
You hardly need more instruction than this. Impossible Pies really do seem like a miracle, making their own crust.  Notes:  I personally love coconut and don't just "sprinkle a little" on top. My coconut fills the pie pan before the filling goes in! I serve this pie cool in summer and warm in winter.  If your pie isn't completely set after 40 minutes, turn off the oven but don't remove the pie. Let coast to its final destination in the cooling oven. The pie is done when it doesn't jiggle in the center.  Disclaimer: I am not a chef, nor a licensed food service professional of any kind. Impossibly Easy Mixed Berry Crumble from Bisquick

Image
Mixed Berry Crumble My DP Dave can be difficult to please because he's a former professional cook. He's not afraid to offer praise and criticism when it comes to a new dish. This is one of the few that only got one response: a moan of pleasure and an empty plate.   This is the beauty of impossibly easy pies from Bisquick. An internet search will give you many choices.  RECIPE INGREDIENTS Streusel:    1/2 cup Bisquick 1/4 cup packed brown sugar 1/4 cup chopped nuts 2 Tablespoons cold butter or margarine *** Pie Filling:  1 12-oz bag frozen mixed berries 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg *** The Magic of Impossible Pies: 1/4 cup Bisquick 1/2 cup sugar 1/2 cup milk 1 Tablespoon butter 2 eggs METHOD 1. Mix the streusel in a small bowl and set aside. Heat oven to 325F.  2. While the original recipe calls for a pie pan or 8x8 baking dish, I recommend muffin tins. Spray your chosen baking dish with cooking spray.  3. Mix the berries, ...

Tuna Broccoli Bake

Image
Tuna Broccoli Bake This is similar to the famous Impossible Pies, but more like a casserole in some ways. It's a great way to have a quick little lunch or light dinner before going  out. Notes: 1. Definitely use a square pan if you want the even, perfect servings for six.  2. If it's still a bit soggy in the middle after 40 minutes baking, turn off the oven and allow it to coast to its final destination for another 15 minutes.  Source not available.  ************************ Disclaimer: I am not a chef, nor a licensed food service professional of any kind. Impossible Pumpkin Cheesecake

Image
Impossible Pumpkin Pie I love pumpkin pie! Unfortunately, pie crusts and I are not on the best of terms. Without Dave to make the pie crusts, I rely on recipes that either make their own pie crusts or have no crust to speak of.  Notes:  The garnishes at the bottom of the recipe are just the starting point. Everyone loves their pumpkin pie and/or cheesecake served a different way. I'm a fan of a little Cool Whip, and that's it. A friend of mine prefers a drizzle of caramel sauce and a sprinkling of nuts. For others, ice cream "cuts the sweet."  Sources: http://bettycrocker.com where you will find so many recipes, it's easy to get lost in them all.  ************************ Disclaimer: I am not a chef, nor a licensed food service professional of any kind. In small bowl, stir remaining ingredients until blended. Pour into pie plate. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Success Pie plates vary in size from manufacturer to manufacturer. Using too small a pie plate will cause the pie to run over while baking. Pie plate sizes are usually marked on the backs of the plates; if not marked, measure from inside rim to inside rim. Serve With Make a quick salad of sliced beets and red onion rings on a bed of greens drizzled with vinaigrette dressing. Serv...
