Naughty! Monkey Coffee

This recipe is so naughty, I can't believe I'm publishing it where my bariatric friends can see. Well, mainly it's for me. I don't drink hardly at all, but when I do, this is my drink of choice. Why is it called Monkey Coffee? I have no clue. I call it sinful and that's enough.  Squirt the syrup on the sides of an old-fashioned glass. Add coffee cubes or ice cubes. Coffee cubes are simply coffee poured into an ice cube tray and frozen. Once solid, put them in a zip-top bag for storage. (You did label that bag, didn't you?)  Now pour in the vodka, Bailey's, and amaretto. Top off with some half-and-half. I like mine fairly blonde, but that's a "to taste" thing.  You may garnish with a maraschino cherry, if desired. Serve immediately. 

Cheaters Cookie Dough with Cake Mix

I don't have time to spend with complicated cookie recipes, especially when I run up on a deadline of Cookies Due Tomorrow! So here's a quickie cookie recipe to get you out of a jam.   Cake Mix (any flavor) 2 eggs ½ c. oil   Mix. Scoop on cookie sheet. Bake at 350F about 10 min. YMMV on cook time. Banana Raisin Bread I'm a sucker for bread, especially quick breads. It's pretty easy to see this recipe came off the side of a box of graham cracker crumbs. I also recommend that you use bananas that have turned black on the outside. The sugars are fully developed, and they're "mushy" so easy to stir in. If you don't have time to use the bananas immediately, peel them and throw in a zippered freezer bag until you can use them. That way, you'll always have a supply of bananas for banana bread, muffins, and other treats.

Turtle Cheesecake Trifle 2 Sara Lee Pound Cakes (found in the freezer section of the grocery) 3 8-oz pkg cream cheese, softened 1-1/2 tsp vanilla extract ¾ cup sugar 12 oz Cool Whip 2 c chopped pecans (I used walnuts) 10 oz caramel ice cream topping 10 oz hot fudge ice cream topping (I used Hershey’s syrup) 1.        Cut the pound cakes into bite-sized cubes 2.        Use a mixer to cream together the cream cheese, vanilla, and sugar. Bacon Sriracha Potato Salad

Applesauce Bread

Applesauce Bread ½ c softened butter 1 large egg 1-1/2 t baking soda ¾ t nutmeg 1 cup sugar 1-1/2 c. flour 1 t. ground cinnamon ½ t kosher salt 1-1/2 c applesauce 1 t. pure vanilla extract Preheat oven to 350F. Prepare two small loaf pans by spraying with cooking spray. Set aside. In large bowl, blend together the butter, egg and sugar Add flour, baking soda, spices and salt. Mix until dough is crumbly. Pour in applesauce and mix. Add vanilla and mix. Scrape into loaf pans. Bake at 350F for 40 minutes. Cool completely, then turn out of pans.

Okay, so this one's not a low carb. Let's face it. Once in awhile, you need something that is a bit "naughty" for a variety of reasons. My band hates popcorn, and those soft pretzels sold in theaters turn to glue in my pouch. Painful! However, I can do these homemade versions if I eat one very, very slowly. DH is happy because he gets his favorite treat again. Fair trade! Soft Pretzels Ingredients 1   package  (8) refrigerated breadsticks 1     beaten egg white 1   tablespoon  water     Poppy seed Directions Unroll breadsticks so they lay flat. Gently pull each breadstick into a 16-inch rope. Shape each rope into a pretzel by crossing one end over the other to form a circle, overlapping about 4 inches from each end. Take one end of dough in each hand and twist once at point where dough overlaps. Carefully lift each end across to the edge of the circle opposite it. Tuck ends under edges to make pretzel shape. Crock Pot Chicken and Sweet Potato Stew 4 boneless skinless chicken breasts, cut into bite-sized pieces 2 medium sweet potatoes, peeled and cubed 2 medium Yukon Gold potatoes, peeled and cubed 2 medium carrots, peeled and cut into 1/2-inch pieces 1 can (28 oz) stewed tomatoes 1 tsp salt 1/2 tsp black pepper 1/4 tsp ground cinnamon 1/4 tsp ground nutmeg 1 tsp paprika 1 tsp celery seed 1 cup chicken broth 1/4 cup chopped fresh basil Combine all but the basil in the crock pot. I miss this recipe. The "Frog Eye" part comes from a tiny pasta not available around here. (sniffle) I miss it. The kids, however, think it's a cool recipe since it sounds gross.
