Any Fruit Bread (Apple Butter Bread Reimagined)

Image
Any Fruit Bread (Apple Butter Bread Reimagined) Use apple butter or any other jam, jelly, or  preserves! This bread's flavor changes with each jam/jelly used. I personally make the small because it does indeed have a high rise. Play it safe the first time and make a size smaller than you normally would.  Sources: The Bread Machine Cookbook by Donna Rathmell German ISBN 1-55867-025-4 ************************ Disclaimer: I am not a chef, nor a licensed food service professional of any kind. Apple Chunk Bread

Image
Apple Chunk Bread Frankly, I didn't peel the apples. I did dunk all the apple chunks in lemon water to keep them from browning.  Sources: The Bread Machine Cookbook by Donna Rathmell German ISBN 1-55867-025-4 ************************ Disclaimer: I am not a chef, nor a licensed food service professional of any kind. Pumpkin/Winter Squash Bread

Image
Pumpkin/Winter Squash Bread This versatile bread allows you to flex according to what's available in the grocery store in produce. Sometimes I can find only butternut squash or acorn squash, and not a sugar baby or pie pumpkin. I have resorted to canned pumpkin.  This bread comes out a bit dense and chewy. It has whole wheat flour as well as bread flour.  Sources: The Bread Machine Cookbook by Donna Rathmell German ************************ Disclaimer: I am not a chef, nor a licensed food service professional of any kind. Soft Pretzels

Image
Soft Pretzels Recipe Okay, so this one's not a low carb. Let's face it. Once in awhile, you need something that is a bit "naughty" for a variety of reasons. Ingredients 1 package ( 8) refrigerated breadsticks. 1  beaten egg white 1 tablespoon water     Poppy seeds (optional) or salt crystals Directions Unroll breadsticks so they lay flat. Gently pull each breadstick into a 16-inch rope. Shape each rope into a pretzel by crossing one end over the other to form a circle, overlapping about 4 inches from each end. Take one end of dough in each hand and twist once at point where dough overlaps. Carefully lift each end across to the edge of the circle opposite it. Tuck ends under edges to make pretzel shape. Moisten ends; press to seal. Place on a greased baking sheet. Brush with a mixture of beaten egg white and water. Sprinkle with poppy seeds. Bake in a 375 degree F. oven for 12 to 15 minutes or until golden. Makes 8. Nutrition Facts Calories103, Total Fat (g)2, Saturate...

Orange Cinnamon Bread

Image
Orange Cinnamon Bread This bread recipe was the overall winner of a poll I conducted among my Facebook friends, based on title alone.  Based on the size of my bread machine, I used the Medium sized amounts column. My bread machine's recipe book had recipes requiring 3 cups of flour, and that seems to work best for my bread machine.  Notes: I didn't have any grated orange peel, so I had to substitute grated lemon peel.  Sources The Bread Machine Cookbook by Donna Rathmell German. French Honey Bread

Image
Crusty and high rise? Count me in! It's not as sweet as you might think. Note:  1. This is a high-rise bread. Start with the small loaf and work your way up until the bread machine produces a good-sized loaf for its type. Medium works for my bread machine, but no more!  Disclaimer: I am not a chef, nor a licensed food service professional of any kind. I'm a grandmother who loves to cook and loves efficient cooking. Fall Harvest Bread

Image
Fall Harvest Bread  I've used this recipe since I first got a bread machine and I love it.  Notes: 1. Please note there are two sizes. If your bread machine normally needs 3 cups of flour, use the larger size. If you're unsure, make the smaller size first.  Sources: Electric Bread (ISBN 735342931523)  Bread Electric: Suzan Nightingale, Art & International Productions: 9780962983115: Amazon.com: Books ************************ Disclaimer: I am not a chef, nor a licensed food service professional of any kind. Witch’s Broomstick Bread

Image
Witch's Broomstick Bread Intro:  Easier than it looks to make, but there is an alternative for those who are uncomfortable with making their own bread dough.  Notes: 1. Intimidated? Don't worry! Just use refrigerated bread dough or, if you have one, the pizza dough recipe from your bread machine. Just follow your bread dough directions to thaw and/or rise and then start this recipe at Step 3.  2. Just any marinara sauce you want, not just meatless. Give everyone their own cup/mug of marinara sauce and let them dip away.  Sources Disclaimer: I am not a chef, nor a licensed food service professional of any kind. Double Apricot Almond Bread

Image
Double Apricot Almond Bread I love this recipe! When I was a kid, using baby food to flavor baked goods was a fad and a great way to change up an ordinary food like bread. "Prune Cake" was a thing. Really!  It still exists today:  Baby Food Prune Cake Recipe - Food.com   Notes: 1. Make sure to reserve the 1-2 Tablespoons of baby food for the glaze. Yes, it's worth the trouble.  Disclaimer: I am not a chef, nor a licensed food service professional of any kind. I'm a grandmother who loves to cook and loves efficient cooking. Fun dinner rolls

Image
I hope this can be read easily. I had to do a bit of sizing to get it to fit. If it can't be read, please let me know. The braided Dinner rolls are the best for a cheat hack to make you look like a genius baker.    Notes: 1. The braided roll can be made using store-bought pizza dough, roll it out and cut it into three long strands. Brush them with melted butter, braid them, brush with a simple egg wash, and bake at 375F until golden. Optionally, you can sprinkle with poppy seeds over the egg wash.  2. Store bought dinner rolls from the refrigerated section of the grocery store can be made into Parker House style rolls by flattening them with a rolling pin, buttering them, and then folding them into the classic Parker House shape Bake at 400F for about 10-12 minutes, or whatever the bag says.  Disclaimer: I am not a chef, nor a licensed food service professional of any kind. Sweet Quick Bread Mix

Image
Sweet Quick Bread Mix Not only does this make a great "shelf special", it's a gift you can give with a few additions and a card.      Recipe Notes:  Preheat oven to 325F. To make the bread, use 3-1/2 cups of the mix. Add 2 eggs, 1/3 cup of vegetable oil, 1 tsp of vanilla or other flavoring, and enough liquid like juice, milk, or water to moisten. Keep in mind that your add-in like pumpkin, banana or zucchini may also have moisture inherent to the add-in, so you may want to hold off adding liquid until after you've included your add-in. Nuts may be rolled in the powder mix before beginning the recipe to avoid them sinking to the bottom. On average, most sweet breads take about an hour to bake in a standard loaf pan.    Personal Notes: As seen in the picture, the possibilities are varied and may be adjusted to fit what's seasonally available. Carrot-Orange loaf in the spring, Zucchini Bread in early summer, Pumpkin Bread with Pumpkin Spices...

Muffin Mix and Variations

Image
MUFFIN MIX  First, the basic mix, then how to make it into muffins, and then what you can do with that very basic muffin to jazz it up.  How to make Melt-in-Your-Mouth Muffins This recipe comes from the Make a Mix Cookbook I've mentioned in previous posts. It's well worth a place on your cookbook shelf. I recommend writing the ingredients below on the container of the muffin mix so it's handy. Add a note about the time and temperature of the oven and you're set to make muffins even after only one cup of coffee.  2-3/4 cups Muffin Mix  1 egg, beaten 1 cup milk 1/2 cup butter, melted or 1/2 cup vegetable oil  Preheat oven to 400F (205C). Spray your muffin tins with cooking spray or use cupcake liners. Put muffin mix in a big bowl. Mix all wet ingredients and then add all at once to dry. Stir until just moistened. Do not overbeat. It's supposed to be lumpy, trust me. Fill your muffin tins with your batter until 3/4 full. Bake 18-20 minutes until golden brown...

Corn Bread Mix

Image
Corn Bread Mix This recipe makes a sweeter version of corn bread. Some folks prefer to have a more corn-forward recipe. Adjust as needed.  Remember that this is made using the muffin method, so don't over-beat. Just mix until moistened. A lumpy batter is better than an overbeaten one. I actually prefer this as corn muffins, so don't be afraid to change the baking vessel to a greased muffin tin, if desired.

Lena’s Not so Secret Egg Bread Recipe

6 3/4 to 7 1/4 cups all-purpose flour 2 packages active dry yeast 2 cups of milk 1/4 cup sugar 1/4 cup butter or margarine 2 tsp. salt 3 eggs   In a large mixer bowl combine the three cups of the flour and the yeast.   In a saucepan heat milk, sugar, butter, and salt just until warm (115 degrees to 120 degrees) and butter is almost melted; stir constantly.   Add to flour mixture; add eggs.   Beat at low speed of electric mixer 1/2 minute, scraping bowl.   Beat three minutes at high speed.   Stir in as much remaining flour as you can mix in with a spoon. Turn out onto a lightly floured surface.   Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).   Shape into a ball.   Place a lightly greased bowl; turn once to grease surface.   Cover; let rise in a warm place till double (about 1 1/4 hours).   Punch down; divide dough in half.   Cover;...

Cajun Spice Bread

Image
I'm a lazy old hag. I will, upon occasion, break out my KitchenAid mixer and the dough hook, but I prefer to dump the ingredients in my bread machine, punch a few buttons, and walk away until the scent draws me back into the kitchen. By that time, I'm usually facing a "begging look" from Da Roomie, whose nose is even more keen than mine.  Hint: Don't have a Cajun spice blend? You can find mixes all over Pinterest.

Banana Raisin Bread

Image
Banana Raisin Bread I'm a sucker for bread, especially quick breads. It's pretty easy to see this recipe came off the side of a box of graham cracker crumbs. I also recommend that you use bananas that have turned black on the outside. The sugars are fully developed, and they're "mushy" so easy to stir in. If you don't have time to use the bananas immediately, peel them and throw in a zippered freezer bag until you can use them. That way, you'll always have a supply of bananas for banana bread, muffins, and other treats.

Applesauce Bread

Pour in applesauce and mix. Add vanilla and mix. Scrape into loaf pans. Bake at 350F for 40 minutes. Cool completely, then turn out of pans.
