Old Fashioned No-Bake Lemon Icebox Pie

 I might have published this before, but it bears repeating.  This recipe is very versatile. Change out the fruit according to what you can find in the market or even the frozen fruit section of grocery stores.  You can also change out the shape by changing the mold from the recommended loaf pan to whatever you have handy. I personally collect those copper-colored gelatin molds you find in thrift stores and garage sales, but the new silicone molds offer a wealth of opportunities. Even individual molds can make serving much easier.  A dollop of whipped topping and a sprinkle of edible glitter finishes the dessert in moments. Voila! You look like a star and note that even vegans might enjoy this dish. 

Sandwich Spreads for When it's Too Hot to Cook

 It's too hot to cook in Florida and most of the Deep South right now. It's mid-July, and sometimes all I can do is reach for a popsicle.  These easy sandwich spreads are the perfect answer to "not another sandwich!" and "we can take this to the picnic table" at the theme park or zoo rather than spend money at an overpriced restaurant with pretensions of grandeur.  I hope you like them as much as I do. The Deviled Egg Sandwich Spread is one of my go-to staples, since hard-cooked eggs can be made well in advance. Keeping them around to make the spread is the issue since hard-cooked eggs are a real temptation.

Jell-o Jigglers Kid and Adult Version

Jell-o Jigglers Who didn't love these as a kid? So simple, so easy, so…easy to turn into an adult naughtiness. (That recipe is at the bottom.) Molds are available just about anywhere! Or just use cookie cutters. Adult Jigglers Warning! Do not serve these to kids! Ingredients ·          1 1/2 cup water ·          3/4 cup vodka (check out flavored vodkas for variety!) ·          2, 4- serving packages of Jell-O Instructions 1.      Boil the water in a small sauce pan over high heat. 2.      Add the Jell-O to a small bowl. 3.      Add the boiled water to the bowl with the jello. 4.      Stir until the Jell-O has been completely dissolved. Creamy Lemon Squares When you have a child who loves lemons, you need a quick and easy recipe to satisfy those sourpuss cravings! And who doesn't love lemons and lemonade in the hot summertime? Hint: if you have a food processor, you can "cut in" the cold margarine by dumping the wafers, flour, and brown sugar in the processor bowl, add the margarine in bits, and pulse until it resembles coarse crumbs. Bacon Sriracha Potato Salad

https://peasandcrayons.com/2015/03/bacon-sriracha-potato-salad.html Ingredients 3 lbs red potatoes 3-4 slices of bacon 2.5 TBSP white vinegar 1/4 tsp salt 3/4 cup quality mayo [ homemade or store-bought ] 1/4 cup sour cream 1.5 TBSP sriracha chili sauce [ extra to taste ] 1/4 cup chopped green onion paprika, to taste Instructions 1.      Peel potatoes and chop into 3/4-inch cubes. 2.      Place potatoes in a large pot and cover with cold water, about 1 inch above the potatoes. 3.     Set burner to high and bring water to a boil. 4.      While you wait, line a rimmed baking sheet with parchment paper and top with 3-4 slices of bacon. Set oven to 400 degrees F and place the baking sheet inside [no need to pre-heat] on the center rack. Bake for 20 minutes until crispy and golden.
