Impossibly Easy Mixed Berry Crumble from Bisquick

Mixed Berry Crumble

My DP Dave can be difficult to please because he's a former professional cook. He's not afraid to offer praise and criticism when it comes to a new dish. This is one of the few that only got one response: a moan of pleasure and an empty plate.  This is the beauty of impossibly easy pies from Bisquick. An internet search will give you many choices. 

RECIPE INGREDIENTS

Streusel: 

 1/2 cup Bisquick

1/4 cup packed brown sugar

1/4 cup chopped nuts

2 Tablespoons cold butter or margarine

Pie Filling: 

1 12-oz bag frozen mixed berries

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

The Magic of Impossible Pies:

1/4 cup Bisquick

1/2 cup sugar

1/2 cup milk

1 Tablespoon butter

2 eggs


METHOD

1. Mix the streusel in a small bowl and set aside. Heat oven to 325F. 

2. While the original recipe calls for a pie pan or 8x8 baking dish, I recommend muffin tins. Spray your chosen baking dish with cooking spray. 

3. Mix the berries, cinnamon, and nutmeg. Arrange in baking dish, spreading around as equally as possible. 

3. In a blender, mix the 1/4 cup Bisquick, sugar, milk, butter, and eggs. Blend until combined. You may have to scrape the sides of your blender carafe. Pour over top of the berries. Sprinkle with the streusel. 

4. Bake at 325F up to one hour, depending on your choice of baking pan. Muffins will cook faster than a single baking dish. It's done when the crust turns golden. 

Notes:

1. Note this recipe has three stages: Streusel, Filling, and Impossible Pie mix. It's worth the extra bother. 

2. While this crumble is delightful on its own, a good dollop of Cool Whip makes it even better.
