Leftover Pot Roast Soup

This one is a bit high in carbs due to the corn and potatoes. The general idea here is to use up those leftover veggies, so don't hesitate to substitute lower carb veggies like green beans, yellow squash, zucchini, broccoli, and brussells sprouts.


I dedicate this recipe to my brother Scot, who is up there in the wilds of western Virginia. Today is his birthday, and I miss him.
