Soup-Slow-Cooker Saturday-- Slow Cooker Chicken Gumbo

Again, I never bother with buying chicken breasts when I have leftover cut up cooked chicken or boneless chicken thighs available for much, much cheaper. (See my notes on the Slow Cooker Jambalaya on Feb 13 for more cheap cooking hints, like making your own chicken broth.)

Dr. Oz’s Green Breakfast Drink

Make the breakfast drink that Dr. Oz swears by! This "green drink" is high in fiber, low-calorie and rich in vitamins. 

Ingredients
 2 cups spinach, 
2 cups cucumber
, 1 head of celery, 
1/2 inch or teaspoon ginger root
, 1 bunch parsley, 
2 apples, 
Juice of 1 lime, 
Juice of 1/2 lemon
 
Directions
Combine all ingredients in a blender. This makes approximately 28-30 ounces, or 3-4 servings.

Just remember to serve the rice separately and those who can have the rice may pour the gumbo over the rice in their bowl if they choose.

This low-carb version may make my dear Cajun friend Terrie start fussing at me, but it works. :grinning at Terrie:
